I'm going on a trip and want to carry my gun. I have a permit in IL. Not a concealed weapons permit. Can I carry the unloaded gun in one bag and the ammo in another bag?

I am buying a used motorcycle. Here is the problems: my wife calls me all the time after work giving me a "honey do" list (pick up milk, diapers, bread, ect...) After doing research, I learned a bit about saddlebags, but have no clue how big they are and how much they can actually hold. How am I able to old a lot of stuff sometimes or is it not plausible? Is there any other storage options that might be better for me? Thanks.
